How To Boil Eggs

Growing up my favorite part of Easter was decorating the eggs (okay, actually, it may have been the chocolate bunnies, but eggs were right up there). Even now that we're grown up, whenever my family has the opportunity to be together for Easter, we always end up boiling up a batch and dying them. Just in case I'm not the only one who's into dying eggs, I thought I'd give you a few tips on how to boil eggs.

  1. Place eggs in a saucepan with enough water to cover the eggs by 1 inch.
  2. On high heat, bring to a boil.
  3. Cover pan, remove from heat and let sit for 10 minutes (3-4 for soft-boiled and 5-6 for medium-boiled).
  4. While eggs are sitting, fill a medium bowl with ice and water.
  5. Use a slotted spoon to transfer eggs from pan to ice bath. Let sit for 5 minutes.
  6. Remove from ice bath and enjoy!

Also a good tip which helps center the yolk instead of it being on one side or the other- poke a small hole with a thumbtack in the "fat" or rounder end of the egg. Make sure it is the round end- if you do it to the small/oval end the egg runs out (not like I've done that- just saying Eye-wink). It really works!

I always pour out the hot water, "bounce" the eggs in the pot to crack to the shells, and then put them in the cold bath. It makes them easier to peel the shells off. Or so my Nanna always said...and Nanna was always right! Eye-wink

Try timing it with a timer mandiesoh, 6 minutes will work. Just leave the eggs in the boiling water for 6 minutes and then run them under cold water in your sink. Don't put your eggs in until the water has already started to boil though.

I do basically the same thing except I add a little oil to the water, a little kosher salt, and a little white vinegar. The vinegar really helps keep the yolks towards the center in case you are gonna make deviled eggs.

I also let them sit longer too. I bring to boil. Cover. Turn off heat. I let them set on that burner for about 20 minutes.

If I'm cracking them now for use to be chopped I put them in a colander in my sink and run cold water over them and just bounce the heck out of them in the colander until they are good and cold and "all cracked up" (lol). The peels slip right off and away we go chopping.

If I need them nice I put them in the colander and let the cold water flow over them and give them a little toss every so often. For some reason this works better for me than the ice water bath - don't know why?
